In a bowl, mix chicken, chopped spinach, bacon, ranch dressing, and dry ranch mix (if using) until combined.

Lay out a tortilla. Sprinkle ¼–⅓ cup cheese in the center, then spread ⅓–½ cup of the filling evenly. Fold sides over and press lightly.

Heat skillet or griddle to medium (~350°F). Brush or spray seam side with oil. Cook 2–4 minutes until golden. Flip, cook another 2–4 minutes until filling is hot and melty.

Cut in half and serve warm.
Note
Use your favorite tortillas: low-carb for a lighter option, or whole wheat for a classic taste. Both work beautifully. Choose a ranch dressing you love—it’s the flavor star. Optional: dry ranch seasoning for extra zing. Prep ahead: cook chicken and bacon in advance to save time.
