  1. 1. Place chopped spinach in a microwave-safe mug. Add 1–2 tablespoons of water and cover loosely. Microwave for 30 seconds to steam.
  2. 2. Crack the eggs over the spinach. Add salt, pepper, and Parmesan.
  3. 3. Scramble the eggs gently with a fork so the spinach and eggs are evenly mixed.
  4. 4. Microwave for 1–1.5 minutes, stopping to stir halfway if needed, until eggs are fully cooked. **Watch carefully, as the eggs might pop while cooking.**
  5. 5. Serve hot directly in the mug.
