Golden on the outside, tender and flavorful on the inside, these fritters are packed with chickpeas, sweet potato, and fresh herbs. Perfect for a light lunch, snack, or casual dinner.

  1. 1. In a large bowl, mash the chickpeas slightly. Add grated sweet potato, onion, garlic, parsley or cilantro, egg, flour, cumin, salt, and pepper. Mix until well combined.
  2. 2. Heat olive oil in a skillet over medium heat.
  3. 3. Scoop small portions of the mixture and flatten into patties. Fry 2–3 minutes per side until golden and crispy.
  4. 4. Transfer to a paper towel-lined plate to drain excess oil.
  5. 5. Serve warm
