  1. 1. Preheat oven to 450°F. Spray a rimmed baking sheet with non-stick cooking spray.
  2. 2. Place tilapia on the prepared baking sheet and season with salt and pepper. Roast for 6 minutes.
  3. 3. Meanwhile, combine chopped tomato and basil.
  4. 4. Top tilapia with mozzarella slices and the tomato-basil mixture. Return to oven and roast for an additional 4 minutes, until fish is cooked through and cheese is melted.
  5. 5. Serve immediately.
