Ingredients
12oz tilapia fillets
Salt and black pepper, to taste
1Roma tomato, chopped
½ tablespoon fresh basil leaves, chopped
1oz fresh mozzarella, sliced
Instructions

1. Preheat oven to 450°F. Spray a rimmed baking sheet with non-stick cooking spray.

2. Place tilapia on the prepared baking sheet and season with salt and pepper. Roast for 6 minutes.

3. Meanwhile, combine chopped tomato and basil.

4. Top tilapia with mozzarella slices and the tomato-basil mixture. Return to oven and roast for an additional 4 minutes, until fish is cooked through and cheese is melted.
