  1. 1. Preheat oven to 400°F (200°C). Toss cauliflower, bell peppers, and onions with olive oil, salt, pepper, and optional spices. Spread evenly on a baking sheet and roast for 15–20 minutes.
  2. 2. Scatter frozen sausage over the vegetables and continue roasting for another 10 minutes.
  3. 3. Beat eggs in a bowl with salt and pepper. Scramble in a skillet over medium heat until just set.
  4. 4. Combine roasted vegetables, sausage, and scrambled eggs in a large bowl or baking dish.
  5. 5. Divide into 5 servings. Sprinkle shredded cheese on top of each portion.
  6. 6. Store in airtight containers in the fridge for up to 5 days. Reheat in the microwave as needed.
