Golden on the outside, tender and flavorful on the inside, these fritters are packed with chickpeas, sweet potato, and fresh herbs. Perfect for a light lunch, snack, or casual dinner.
Ingredients
1½ cups cooked chickpeas (or 1 can, drained and rinsed)
1medium sweet potato, grated
¼ cup chopped red onion
2garlic cloves, minced
¼ cup chopped fresh parsley or cilantro
1 egg
¼ cup flour (or chickpea flour for gluten-free)
1tsp cumin
Salt and pepper, to taste
Olive oil, for frying
Instructions

1. In a large bowl, mash the chickpeas slightly. Add grated sweet potato, onion, garlic, parsley or cilantro, egg, flour, cumin, salt, and pepper. Mix until well combined.

2. Heat olive oil in a skillet over medium heat.

3. Scoop small portions of the mixture and flatten into patties. Fry 2–3 minutes per side until golden and crispy.

4. Transfer to a paper towel-lined plate to drain excess oil.
