High-Protein Black Bean Lime Dip (Vegan)

Description

Midge knows that a flavorful, protein-packed dip can turn any snack into a satisfying treat. This black bean lime dip is quick to make, vegan, and full of zesty, savory flavor—perfect for dipping veggies, spreading on bread, or adding to a salad.

Instructions

  1. 1. Grate or finely chop the garlic and ginger.
  2. 2. Heat olive oil in a large saucepan over medium heat and sauté the garlic and ginger for 1–2 minutes, being careful not to burn.
  3. 3. Drain and rinse the black beans, then add them to the pan.
  4. 4. Fry for a couple more minutes, adding a few tablespoons of water as needed to prevent sticking.
  5. 5. Remove from heat and stir in salt, pepper, and lime juice.
  6. 6. Mash with a potato masher or fork until smooth and creamy.
  7. 7. Add it to bread, potatoes, a salad, or just munch it down as a real high-protein snack!
