1. Preheat waffle maker and lightly spray with non-stick cooking spray.

2. In a blender, combine cottage cheese, oats, egg whites, and any optional cinnamon or lemon zest. Blend until smooth.

3. Pour batter into the waffle maker and cook 3–5 minutes, or until golden brown.

4. Serve warm, topped with fresh berries, a dollop of Greek yogurt, and a drizzle of maple syrup, sugar-free syrup, or raw honey.
