Midge’s High-Protein Turkey & Cheese Pinwheels
Description
These Turkey & Cheese Pinwheels are bite-sized, high-protein, and perfect for meal prep or a quick grab-and-go lunch. Creamy Greek yogurt keeps the filling satisfying without heaviness, while fresh spinach adds color and nutrients.

1. In a small bowl, combine Greek yogurt with either ranch or zesty Italian seasoning until smooth.

2. Lay a tortilla, wrap, or leaf flat and spread the cheese mixture evenly to the edges.

3. Layer turkey slices, then cheese slices, and spinach leaves. Leave a 1-inch strip of just the spread at the top edge to seal the roll.

4. Roll tightly from the bottom up, pressing the top edge to seal.

5. Wrap in plastic and refrigerate for 30 minutes to firm up.

6. Slice into 1-inch pinwheels, discarding the empty ends.

7. Serve immediately or store in an airtight container in the fridge for up to 4 days.

* Use egg wraps, protein wraps, low-carb tortillas, large collard leaves, or lettuce leaves instead of flour tortillas. * Add thinly sliced bell peppers, shredded carrots, or cucumber for extra crunch and color. * Bake sliced pinwheels at 375°F for 12–15 minutes with melted butter and garlic for a warm version. * Pair with tomato soup, vegetable broth, or your favorite dipping sauce.
