  2. 2. Remove the lid and stir in the cornstarch. Cook for an additional 5–8 minutes until the lentils are tender and the mixture thickens slightly.
  3. 3. Heat a medium pan over high heat and warm the tortillas for about 1 minute per side.
  4. 4. Divide the lentil-quinoa mixture evenly among the tortillas. Top each with red onion, diced avocado, and crumbled cheese.
  5. 5. Serve with lime wedges.
