Deviled Pickle Bites

1. In a food processor, combine cream cheese, 2 tbsp pickle de gallo, shredded cheese, mashed potato flakes, Dijon mustard, garlic, and half the dill. Process until smooth.

2. Transfer mixture to a bowl and stir in the remaining 2 tbsp pickle de gallo.

3. Spoon filling into a piping bag fitted with a medium star tip.

4. In a small skillet over medium-low heat, melt butter. Add panko and crushed red pepper. Cook 3–5 minutes, stirring frequently, until golden brown. Cool slightly.

5. Arrange pickle chips on a serving platter. Pipe about 1 teaspoon of filling onto each chip.

6. Sprinkle toasted breadcrumbs on top and garnish with remaining dill.
