Peach Melba Protein Sundaes
Description
Peaches and raspberries were made for each other, and this little sundae gives the classic Peach Melba a protein-packed makeover. Juicy peaches, bright raspberries, and a creamy vanilla filling come together in layers that feel downright indulgent. It’s a pretty dessert with plenty of fresh fruit and protein, proving that a sundae doesn’t need a mountain of ice cream to be a treat.

1. Prepare the peaches. Place the sliced peaches in a small skillet over medium heat. Add the honey and lemon juice. Cook for 3–4 minutes, gently stirring, until the peaches are warm and slightly softened. Remove from the heat.

2. Make the raspberry sauce. Add the raspberries to a small saucepan over medium-low heat. Cook for 3–4 minutes, stirring occasionally, until they soften and become saucy. Remove from the heat and let cool slightly.

3. Make the protein cream. In a blender, combine the Greek yogurt, cottage cheese, vanilla, and maple syrup. Blend until completely smooth and creamy.

4. Build the sundaes. Divide half of the peach slices among four dessert glasses or small bowls. Spoon the protein cream over the peaches, then add a layer of raspberry sauce. Repeat with the remaining peaches and protein cream.

5. Finish with a little crunch. Sprinkle each sundae with chopped almonds and garnish with fresh raspberries and peach slices.
Note
Midge’s Tip: Make the protein cream ahead and refrigerate it until dessert time. Assemble the sundaes just before serving so the peaches and raspberries stay bright and beautiful.
