A quick roast with a touch of olive oil and seasoning transforms humble chickpeas into a snack that’s satisfying, wholesome, and Midge-endorsed.

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chickpeas dry with a clean towel or paper towels—this helps them crisp up.
  3. In a bowl, toss the chickpeas with olive oil, salt, smoked paprika, garlic powder, and black pepper until evenly coated.
  4. Spread the chickpeas on a baking sheet in a single layer.
  5. Roast in the oven for 25–30 minutes, shaking or stirring halfway through, until golden and crunchy.
  6. Remove from the oven and let cool slightly before serving.

Experiment with seasonings: curry powder, chili powder, cinnamon & cocoa for a sweet version, or za’atar for a Mediterranean twist. Store cooled chickpeas in an airtight container at room temperature for up to 3–4 days. Perfect as a snack, salad topper, or crunchy addition to bowls and wraps. Pinch of black pepper
