Ingredients

For 5 Servings (Meal Prep)

Instructions

  1. 1. Divide greens, vegetables, cooked protein (if using), cheese, green onions, and seasoning evenly into 5 mason jars or microwave-safe containers.
  2. 2. Cover and refrigerate until ready to use.

When Ready to Cook (Per Serving)

  1. 3. In a small bowl, whisk 2 eggs with 2 tablespoons milk.
  2. 4. Pour the egg mixture into the prepared jar or bowl and stir gently.
  3. 5. Loosely cover with a microwave-safe lid or paper towel to prevent splatter.
  4. 6. Microwave for 60 seconds, stir, then microwave for 30 seconds.
  5. 7. Stir again and microwave for a final 30 seconds, or until eggs are set.
  6. 8. Let cool slightly before eating.

* Use a loose cover to allow steam to escape while minimizing mess * Store prepped jars in the refrigerator for up to 3–4 days * Vary vegetables and proteins across jars for different flavor combinations throughout the week
