Description

When you want a breakfast that will actually keep you satisfied, a hearty skillet hash is hard to beat! Crispy potatoes, savory sausage, colorful bell peppers, and tender onions come together in one delicious pan, then get topped with perfectly cooked eggs. Choose turkey or pork breakfast sausage, and make it mild or hot depending on how much zing you like. It’s hearty, colorful, and packed with protein, making it just as welcome on a leisurely morning as it is when you need a breakfast that gets you moving!

  1. 1. Brown the sausage. Heat a large skillet over medium heat. Add the ground sausage and cook for 5–7 minutes, breaking it into small pieces as it browns. Transfer the cooked sausage to a plate and set aside.
  2. 2. Cook the potatoes. Add the olive oil to the same skillet. Add the diced potatoes and cook for 8–10 minutes, stirring occasionally, until they begin to brown and become tender.
  3. 3. Add the vegetables. Stir in the onion and bell peppers. Cook for another 5–6 minutes, until the vegetables are tender and the potatoes are golden. Add the garlic, smoked paprika, Italian seasoning, salt, and pepper, and cook for 1 minute more.
  4. 4. Bring it all together. Return the cooked sausage to the skillet and stir everything together. Cook for another 2–3 minutes to heat through.
  5. 5. **Add the eggs.** Make four small wells in the hash and crack an egg into each one. Cover the skillet and cook for 4–6 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  6. 6. Finish and serve. Sprinkle with fresh parsley and serve hot, right from the skillet.

Note

Midge’s Tip: Want extra-crispy potatoes? Give them plenty of room in the skillet and resist the urge to stir them constantly. Letting them sit against the hot pan for a few minutes is what gives them those delicious golden edges!
