Description

Fresh, flavorful, and easy to pack, these Mediterranean Chicken Pitas make a satisfying high-protein lunch without a lot of fuss. Tender seasoned chicken gets tucked into a soft whole-wheat pita with creamy hummus, crisp cucumber, juicy tomato, red onion, greens, and a sprinkle of feta. It’s a little bit of sunshine in your lunch bag, and it holds up beautifully for a workday meal.

  1. Season the chicken. In a medium bowl, toss the chicken with olive oil, oregano, garlic powder, smoked paprika, salt, and black pepper.
  2. Cook the chicken. Heat a large skillet over medium heat. Add the seasoned chicken and cook for 10–12 minutes, stirring occasionally, until golden brown and cooked through.
  3. Prepare the fillings. While the chicken cooks, chop the cucumber, tomato, and red onion. Warm the pitas briefly if desired.
  4. Build the pitas. Spread about 2 tablespoons of hummus inside each pita. Add the greens, cucumber, tomato, red onion, and cooked chicken.
  5. Finish. Sprinkle with feta and fresh parsley, then drizzle with lemon juice.
  6. Serve. Fold the pitas and serve immediately, or wrap tightly for an easy portable lunch.
