Cottage Cheese Taco Bowl

  1. Cook the beef. Brown the ground beef in a large skillet over medium heat, breaking it into small crumbles as it cooks. Drain any excess fat.
  2. Season it. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and water. Stir well and cook for 2–3 minutes, until the seasoning is fragrant and the beef is evenly coated.
  3. Build the bowls. Divide the chopped romaine among four bowls. Add the seasoned beef, cottage cheese, cherry tomatoes, and avocado.
  4. Top it off. Spoon salsa over each bowl and sprinkle with fresh cilantro. Serve with lime wedges for squeezing over the top.

Note

Midge's Tip:

For an extra-creamy taco bowl, give the cottage cheese a quick whirl in the blender before serving. It turns silky smooth and makes a delicious stand-in for sour cream!
