Beef Stroganoff – Midge Style

1. Heat a large heavy-bottom skillet over medium heat.

2. Season the beef with salt and freshly ground black pepper.

3. Add olive oil to the skillet. Place the beef (or tempeh) in the pan and cook until lightly browned on both sides, about 1–2 minutes.

4. Remove the beef from the pan and set aside. Add the sliced onion and mushrooms to the skillet and cook, stirring often, until the onion softens and the mushrooms begin to release their juices, about 3 minutes.

5. Pour in the broth and stir in the Dijon mustard. Return the beef (or tempeh) to the pan and cook for about 3 minutes so the flavors come together.

6. Stir in the cooked noodles. Turn off the heat and gently fold in the sour cream until everything is coated in the creamy sauce.

7. Sprinkle with fresh parsley if desired and serve right away.
